May 31st, 2013 | Fun, Recipe, Seasonal

When you’re looking for a cool snack on hot days like this one, ice cream is a tempting option. But the calories, fat – and potential for guilt – may outweigh the delight of that big old sundae you’re dreaming of!

Instead, whip up a natural watermelon sorbet, or modify the recipe to incorporate another fresh fruit you love. There are lots of recipes out there, but the folks at Eating Well offer our favorite one. It’s quick, simple and delicious.

It’s also a natural, gluten free, dairy free and low calorie way to cool down…enjoy!

Watermelon Sorbet Recipe

You won’t need many ingredients for this treat!

  • 3/4 cup water
  • 6 cups fresh, cubed watermelon
  • 1/3 cup lime juice
  • 1/2 cup of sugar

Once you have what you need, follow this simple steps…

  • Bring sugar and water to a boil. Reduce heat and simmer for 5 minutes. Remove and let cool to room temperature, about 45 minutes. Cover and refrigerate until chilled.
  • Blend watermelon and lime juice until smooth. After you remove any seeds, whisk in the sugar syrup.
  • Pour mixture into a shallow metal pan and freeze until ice crystals form around the edges, about 30 minutes. Stir the ice into the center of the pan and return to freezer; repeat every 20 minutes until all liquid is frozen.
  • Serve immediately or place in storage container and let harden in the freezer for 1 to 1 1/2 hours.
