Warm Up With Pesto Bean Soup

Soup’s on! Gather round and warm up with a hearty recipe your family is sure to love…pesto bean soup! It’s a Food Network favorite, and one we’ve tested and approved ourselves. Yum!

Packed with protein – which helps with skin cell regeneration – this is one meal that will keep your energy up. Add some ground turkey for an extra protein punch.

Here’s what you’ll need:

    • Garlic (we always recommend using fresh garlic – there’s nothing like it, and it’s said to have skin healing benefits!)
    • Olive oil
    • Crushed red pepper – fun fact…a touch of capsaicin, the active ingredient in hot peppers, is used as a topical pain reliever.
    • Water
    • Pesto (fresh is best!)
    • Grated parmesan cheese
    • Cannellini beans
    • Chicken broth
    • Chopped celery
    • Chopped black olives
    • Roasted red pepper

Putting it together:

      • Saute 5 sliced garlic cloves and a pinch of red pepper flakes in a skillet with olive oil.
      • Add 2 cans drained cannellini beans and 1 cup water; simmer until thick, 8 minutes.
      • Stir in 3 tablespoons pesto and 2 tablespoons grated parmesan.
      • Add 3 cups chicken broth and 1 cup chopped celery; cook 15 minutes.
      • Stir in 1/2 cup each chopped olives and roasted peppers.
