The Benefits of Mango…and a Recipe!

Memorial Day, and the end of May, mark the kickoff to summer and the return of outdoor cookouts! Although we love the traditional favorites like veggie kabobs and pasta salad, it’s nice to change it up a bit. A great way to refresh a tired side dish is by tailoring the recipe to work with a fun, new ingredient, like mango. In addition to its sweet and mellow flavor, mangoes offer a plethora of health benefits.

  • Mangoes improve digestion and support a healthy metabolic rate.
  • Contain folic acid, a form of vitamin B. Folic acid is especially good for women who are pregnant.
  • Provide vitamin A, which has been linked to healthy eyes and vision.
  • Support healthy blood pressure and muscle function.
  • High in antioxidants which fight off free radicals. Free radicals are known to be linked to signs of aging and cancer.
  • The combination of vitamin C and pectin in mangoes may help lower cholesterol.
  • Good source of iron. Your body needs iron to fend-off anemia.
  • Vitamin C keeps your immune system strong, boosts energy, and promotes healthy looking skin.

If you are unsure about where to begin when it comes to preparing mangoes, start by trying this delicious mango salad.

Mango Salad
2 teaspoons balsamic vinegar
2 teaspoons fresh lemon juice
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons extra-virgin olive oil
1 (1-lb) firm-ripe mango, peeled and cut into 1/2-inch cubes
1 large tomato, cut into 1/2-inch cubes
1 small red onion, halved lengthwise and thinly sliced crosswise
1/3 cup fresh cilantro leaves

Whisk together vinegar, lemon juice, sugar, salt, and pepper until sugar is dissolved, then add oil, whisking until emulsified. Add remaining ingredients and toss until coated.
