Potassium is essential for keeping your body running the way it should. However, most people do not eat enough potassium rich foods on a daily basis. If potassium is missed regularly, you run the risk of increased blood pressure which may lead to stroke or heart disease.

Rather than supplements, experts say eating fresh fruits and vegetables hold the key to retaining healthy potassium levels. Because so many of us rely on convenience foods, we miss out on the nutrients packed into fresh food. One amazing fresh vegetable that contains a hefty dose of potassium is the sweet potato! Grill up these potato wedges for a snack or side-dish that no one will want to pass up.

Grilled Potato Wedges


4 medium red potatoes and/or sweet potatoes (about 1 1/3 pounds)
4 cloves garlic, minced
1 tablespoon olive oil
1 ½ teaspoons paprika
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoons water


Scrub potatoes thoroughly with a brush. Cut the potatoes lengthwise into quarters. Cook potatoes, covered, in a small amount of boiling lightly salted water for 10 minutes or until just tender. Drain.

In a small bowl combine garlic, olive oil, paprika, salt, and pepper. Stir in enough water to make a mixture that’s easy to brush on potatoes. Brush over potatoes; place in grill basket.

Grill potatoes on the rack of an uncovered grill over medium on a gas grill or coals for 8 to 10 minutes or until edges begin to brown, turning occasionally.

To get more potassium and other nutrients only fresh fruits and veggies can provide, try scheduling yourself a weekly “meal-prep day”. Set aside time to bake 5 sweet potatoes, cube 5 cups of cantaloupe, and steam 5 cups of broccoli to enjoy in a pinch throughout the week. You and your body will love the convenience!
